Not much into coleslaw? omit the cabbage and try adding some mild kimchi, which works surprisingly well. And if all else fails you can't go wrong with some guacamole. Try all 3 and see which is your favorite.

Generally speaking, the skin on the fish should be bright and shiny, if it looks dull or pale skip it, this is a sign that's its of age. Another sign you can see if the eyes. If they look sunken and cloudy it might not be as fresh as you think. Another tip is you can ask the fish monger "When was this fish delivered", "How often do you rotate the stock"to inquire about the freshness.
The type of fish doesn't matter quite as much as you think. Mostly its how thick and how big the fillet.
If you are using frozen fish make sure to thaw it completely. Place water in a bowl and put the fish inside, leaving the wrapping that it comes in. After 20-30 minutes it should be ready to go. Tip: make sure you consume the fish fairly quickly and don't refreeze it.
Cook at 390-400F for 8 to 10 minutes. Check the internal temperature of the fish at 8 minutes to see if it's at 145F. If it is you can take it out otherwise cook until it reaches 145F.
To keep things fresh you can add lime, avocado, cabbage slaw, cilantro, and any peppers you like to make it spicy.
If you don't have slaw or aren't feeling it you can make a cilantro lime dressing. Add cilantro, garlic, lime juice, extra-virgin olive oil, and 1/2 cup of greek yogurt, and salt to a blender. Make it spicy by adding some jalapeños.
